Spanish Potatoes' Tortilla

Potatoes' Tortilla, tortilla de patatas in Spanish, is an omelette made of essentially egg and potatoes.

The recipe I am sharing here is NOT a typical Spanish Tortilla. It's just another version of many out there. Despite of not being traditional one, it's definitely a delicious one. :D

6 eggs2 Potatoes (big size)1 onion 1 green chili/pepperSaltPepperSpicesOil
Cut the potatoes, onion and green pepper in small thin pieces.

On a wide pan, add a good amount of oil. When it starts getting hot, add potatoes, onion and green chili to it. Stir it often, don't let the mixture stick on the pan.

Add salt and black pepper to it. For more taste, add some spices: tumeric powder, garam masala and red chili powder.

Let it cook until the potato is well done. Keep stirring is when its a little extra done. Then, turn off the flame and let it cool.

Aside, in a bowl beat the eggs and some more spices.

Add the cool potato's mixture to the beaten eggs and mix it well.

Creamy Cheesy Potatoes

So, this is the recipe that may not be new to you, but I used my own imagination in it to make it more personal and pleasent to my taste. You can so the same :)

  • 1/2 kg small potatoes
  • 1/2 cup mayonnaise
  • 1/2  cup cheese
  • 2 tbsp yogurt
  • 2-3 lettuce leaves
  • Salt
  • Black pepper
  • Vinager
  • Coriander
The whole recipe is very easy but it has its process to be done well. First of all, after washing the potatoes , cut them in 2 pieces (if you don't have those little potaoes, cut them in more than 2 pieces). I would recomend not to peel them, they'll conseve their properties and also the taste and presentation gets better.
Now, marinate the potatoes with salt, pepper and vinager. All of three according to your taste. Leave them for an hour minimum.
After an hour, bake the potatoes for 30 minutes at 180 ÂșC. Check them by pinching a knife, if they are done, bring them out and let them be cool.
Apart in a bowl, mix the mayonnaise, yogurt and cheese with a pinch of salt, pepper.
Cut the lettuce leave into little pieces. You can do it with your hands.
Finaly, when the potatoes are cool, place them in a dish and add the mayonaisse mixture, lettuce and corriander. Mix them carefully, trying not to break the potatoes.

Garnish the late with the left cheese, corriander and peprika. Then enjoy! :)

NOTE: as I said in the beginning, you can personalize the dish by anything you prefer (adding red chilli instead of black pepper, use less or more mayonaise, adding chips to give a crunchy touch, etc).
